Here's what a typical day looks like:Daily Kitchen OperationsStock your assigned station with fresh ingredients and raw materials each day.Get comfortable with all our kitchen equipment and always follow safety protocols when using them.Master the fundamentals—knife skills, mise en place prep, and basic cooking techniques that form the foundation of great cooking.Prepare dishes following our standard recipes while keeping portions consistent and waste to a minimum.Work with the flavors and ingredients that define our cuisine—think grilled meats, fresh pasta, vibrant salsas, ceviche, tacos, and everything in between. Familiarity with herbs, spices, chilis, avocado, lime, beans, and quality seafood is a plus.Maintain food safety and hygiene standards (HACCP) at all times—proper handling, storage, labeling, dating, and FIFO rotation are non-negotiable.Keep your workstation and all equipment clean, organized, and hygienic throughout your shift.Flag any hazards, unsafe conditions, or equipment issues to your supervisor right away.Beyond the KitchenKnow our hotel's fire and life safety procedures inside and out.Show up to all briefings, meetings, and training sessions ready to learn.Maintain a professional appearance and personal hygiene standards every single shift.Be a team player—collaborate with the culinary team and other departments to keep things running smoothly.Stay curious and committed to developing your skills in Western and Latin American cooking techniques and kitchen operations.
