We're seeking an experienced professional to be a part of our team as a Sous Chef and Asst Sous Come be part of an incredible team at an amazing restaurant on beautiful St John VI! The Sous Chef will work closely with the Executive Chef to ensure the kitchen staff adheres to corporate guidelines as well as food preparation and kitchen sanitation guidelines. The ideal candidate will have an awareness of health department regulations and will be enthusiastic about working in a fast paced, team-oriented environment.
This position includes 3 weeks of paid vacation when the restaurant is closed for end of season (typically September/October - dates vary and will be determined before end of each season). Assistance with housing on St. John is available.
Responsibilities:
Preparing consistently high quality food in a high demand restaurant.
Break down & prep proteins for service.
Calculate and factor in the time for meats to cook., optimally timing the dishes to come out at the same time.
Organize the kitchen staff to help execute the evening’s operations.
Assist Executive Chef in preparing orders with suppliers.
Taking notes on one’s work performance for later review.
