I've been in the restaurant business for 38 years as an owner, chef, manager and consultant and are offering free advice and help to any one in the business. I've designed 16 first of their kind concepts and menus for people looking to get into the business. I was a Head Trainer for Outback when they were first booming and growing and opened three stores for them. I was one of the very first contestants called for the Food Networks "Great Food Truck Race", gave seminars called "Pride & Performance" to thousands of employees and owners, Increased sales at various restaurants by over 30%, collaborated on articles for major newspapers and the CDC dealing with food handling, created first of their kind logs and hiring techniques. When I do consulting I analyze everything. Invoices, utility usage, purchasing, inventory, ticket average, number of voids, schedule, kitchen set up, menu, demographics of area, competitions menu, prep, storage, P&L's, portioning, staff work ethics, marketing, food cost, labor cost, liquor and beer cost, waste, temperatures, training, etc.
If you already have an existing business but not turning the profits you had hoped you projected when you first opened I can help turn that around for you. If that's the case you need to put your ego aside and have an open mind to any suggestions. Did you open your restaurant because you wanted to sell just hamburgers when there are 4 other burger joints within a mile, or do you want to make money? Are you up for a complete menu change if need be loaded with signature items that no one else offers? I tell owners the most important decision they will ever make is who they hire to run the business. This is the person who will make or break you. You are entrusting this person to look after your investment, your house payment, your car payments, your kids college tuition. If you want to find out why you aren't making that big money I can do that for you as well. I can look at any kitchen and prep sheets and in a matter of minutes find better, more efficient and more profitable ways of doing things.
If you are looking for a "Start Up" I have first of their kind concepts that have no competition. There can be a hundred restaurants near you and none of them will offer what you do. They all have very catchy names and very different concepts from what is out there now. If I design a sports bar, trust me when I say it is the ultimate sports bar. Having TV's showing games and ESPN does not make you a sports bar.
