CRAFTED RVA will be open this summer! We're looking for an excited, motivated, driven Sous Chef to join our management team!
Position Summary:
Our Sous Chef will work directly under the Chef/Owner and with the Kitchen manager to help direct kitchen crew in absence of the Kitchen manager and contribute to the creative process of specials and menu writing. An ideal candidate focuses on service, education, and a positive kitchen culture based on trust and respect. The ideal Candidate must have proven culinary skills and must be able to lead, develop, train and motivate staff.
Responsibilities:
Assist the Chef/Owner in the creation, costing and implementation of new menu items, dinner specials and
menus for catering and special events.
Passionate and familiar with sourcing locally and seasonally
Candidate must be creative and up to speed on new concepts and food trends.
Manage the daily production, preparation and presentation of all food for service
Manage associates in scheduling, training, developing, coaching and counseling, conducting reviews. Also
focus on attracting, interviewing, retaining and motivating the associates while providing a safe work
environment.
Help maintain, analyze and control all labor and food costs; and ensure budgets are met or exceeded while
quality is maintained or improved.
Scheduling of staff according to budget guidelines
Provide kitchen support for private dining functions.
Directs proper sanitation of all kitchen facilities and equipment.
Comply with health code standards for sanitation.
Ensures that all kitchen equipment is in good working order.
Directs proper maintenance of all walk-in coolers (rotation of food products and cleanliness).
Knows expectations and ensures that staff understands them and that they execute said expectations within
the proper guidelines.
Provide support and leadership to line cooks and staff
Should assume the responsibilities of the Kitchen Manager in his or her absence.
Qualifications:
At least 2+ years of management experience
Possess organizational ability, an eye for detail, strong leadership
Positive demeanor, self-motivated, a willingness to learn
Preferred background in high-end regional Southern/American cuisine
Excellent written and verbal communication skills as well as organizational skills.
Computer literate and detail orientated is a must.
Must be able to work a flexible schedule to include weekends and holidays.
Excellent Knife Skills
Working knowledge of all standard kitchen equipment
Culinary degree preferred.
ServSafe Certification preferred
