We are looking to hire a sushi chef to join our culinary team at Shimogamo Gilbert, who can prepare sushi, sashimi, rolls for dine-in, takeout and catering services in accordance with food health and safety regulations and restaurant standards, under the guidance of our head sushi chef.
Responsibilities include preparing sushi rice, handling a wide range of raw fish and other ingredients, preparing for multiple components of sushi bar menu, packing food, managing food inventory and working with an attention to detail to fulfill all orders that meet restaurant's quality standards. To be successful in this role, you should have experience with Japanese cuisine and sushi and be available to take shifts during our open hours.
Main Responsibilities:
· Prepare, make and package food on the menu including nigiri, sashimi, maki and appetizers quickly and efficiently, meeting restaurant’s standards under the direction of Head Sushi Chef and also autonomously.
· Perform preparatory cooking tasks, such as making sushi rice, making stocks and sauces, making soup, cutting fish and meats, and filling all the condiments
· Regularly taking inventory of food supplies and other products
· Maintaining kitchen clean, hygienic and tidy with an understanding of the safety standards, work safety around kitchen equipment and report any maintenance issues to the Head Sushi Chef.
· Working in a small team of BOH and FOH by paying attention to the situation, sharing tasks, jumping in when necessary, and taking a load as a productive team member.
