Summary of Position: Entails overseeing the daily kitchen operations of the Sunset Back of House (BOH) and Grill. “Leadership by example” is required as is the ability to inspire co-workers by demonstrating superior work habits. The kitchen manager will: Train and manage kitchen personnel in the Sunset and Grill and supervise/coordinate all related culinary activities; Estimate food consumption and purchase food / supply accordingly; Select and develop seasonal menus; Standardize production recipes to ensure consistent quality; Establish presentation techniques and quality standards; help plan and price menus; ensure proper equipment operation; ensure proper safety and sanitation in kitchen. The Kitchen Manager will take part in special catering events and may also offer culinary instruction and/or demonstrate culinary techniques. The position reports directly to the General Manager.

Responsibilities:

Must follow regulations and ensure staff adheres to company policies.

Work closely with the Lounge/Front House Manager to ensure adequate staffing for the Sunset and special events.

Meet with the Lounge/Front House Manager to review the Reservation book daily.

Oversees the hiring, firing, training, scheduling, evaluating and disciplining of staff in the back of the house and the Grill.

Coordinates kitchen staff assignments to ensure economy and timely food production.

Is responsible in all aspects of menu planning and revision.

Purchases or requisitions all food products and kitchen supplies.

Responsible for all cost control functions concerning kitchen operation. These duties include determining menu prices, scheduling / regulating labor and overhead costs, and preparing the kitchen budget.

Must be able to fill in for Line Cook, Grill Worker or Dishwasher/Kitchen Assistant as needed.

Must maintain a high level of quality and service in all aspects of the operation.

Ensures the safety and security of the kitchen and its staff.

Handle personnel and customer complaints effectively.

Oversees methods of food preparation and cooking, portion allotment, and food garnishment to ensure food is prepared in the prescribed manner.

Devises and Presents special dishes and will develop recipes for the use of the Sunset Restaurant and Grill.

Establishes and enforces nutrition and sanitation standards for restaurant and Grill.

Ensure the food preparation and presentation standards are met in both locations.

Conducts in-service trainings for continuing staff education.

Attends periodic staff meetings to review policies, progress, problems, and to make recommendations to improve service and ensure more efficient operation.

Qualifications:

Restaurant management, food handlers’ certificate and cooking experience required.

College coursework in accounting, mathematics, finance, and management. Industry organization courses and seminars helpful.

Must possess excellent communication skills.

Manual dexterity required.

Superior knowledge of cooking techniques, restaurant tools, and appliances necessary.

Requirements

Must be able to lift fifty pounds.

Must be willing and able to work various shifts including; weekends, late evenings, and holidays.

Must qualify for Tribal Gaming License and pass pre-employment drug screen.

Must be capable and able to work with the front of the house and back of the house in a professional courteous manner.

Kitchen manager will be in charge of Sunset Restaurant BOH and Grill.

Work Environment and Physical Demands

Working environment consists of various levels of smoke, noise, light, heat, and cold.

Must be able to lift 50 pounds, reach, and bend. Must be able to stand, walk for periods of six or more hours.

Must be able to respond to visual and aural cues.

Must be able to operate in physically and mentally stressful conditions.

Must have the manual dexterity to use a computer keyboard, micros touch screen and phone.
