Responsible for the preparation of food to be served, compliance with all applicable sanitation, health, and personal hygiene standards, and following established food production procedures. Duties include, but are not limited to, peeling, dicing, shredding, and slicing food products using electrical equipment. Must be able to communicate and work as a team.

Prepare food for serving, using established production procedures and systems. Prep items as assigned; grill, deep fry, bake broil, and microwave raw or prepared foods. Measure and assemble ingredients, and cook items according to recipes and menu specifications. Set up steam table; serve or ensure proper serving of food for dining room; stock/restock items on the line according to specifications. Wash and clean raw food products; comply with established sanitation standards, personal hygiene, and health standards. Observe proper food preparation and handling techniques. Store food properly and safely, marking date and item to be stored. Assist with food production to coordinate with meal serving hours so that excellence, quality, temperature, and appearance of food are preserved. Keep work area neat and clean at all times; clean and maintain equipment used in food preparation. Complete food temperature checks before service. Prepare food for special functions as assigned. ESSENTIAL DUTIES AND RESPONSIBILITIES include the following:

Responsible for preparing and/or directing the preparation of food to be served complying with all applicable sanitation, health, and personal hygiene standards and following established food production procedures.

Prepare or direct preparation of food served using established production procedures and systems. Determine amount and type of food and supplies required.

Ensure availability of supplies and food or approved substitutions in adequate time for preparation. Set steam table; serve or ensure proper serving of food for dining room.

Comply with established sanitation standards, personal hygiene, and health standards.

Observe proper food preparation and handling techniques.

Store food properly and safely, marking date and item to be stored.

Plan food production to coordinate with meal serving hours so that excellence, quality, temperature, and appearance of food is preserved.

Keep work area neat and clean at all times; clean and maintain equipment used in food preparation. Complete food temperature checks before service.

Prepare food for special functions as assigned.

Must be able to stand for eight (8) hours per shift.

Must be able to pass background check and acquire gaming license. Must possess valid food handlers card.

QUALIFICATIONS

At least 2 years experience in related food service. Moderate reading and writing skills; proficient interpersonal relations and communicative skills; ability to stand, reach, lift, bend, kneel, stoop, climb, push and pull items weighing 50 pounds or less; auditory and visual skills; ability to follow written and oral instructions and procedures. Must be familiar with roasting, frying, sautéing, grilling, poaching, marinating and braising techniques.

EDUCATION AND EXPERIENCE:

High School Diploma or General Education degree (GED) and at least 2 years related experience/training as a line cook, or equivalent combination of education and experience. Must possess excellent customer service relationships and skills.

LANGUAGE SKILLS

Ability to read and comprehend simple instructions, short correspondence, memos, food orders, menus, etc.

MATHEMATICAL SKILLS

Ability to add, subtract, multiply and divide in all units of measure, and liquid measurements using whole numbers, common fractions, and decimals.

REASONING ABILITY

Ability to apply common sense understanding and carry out instructions furnished in written, oral, or diagram form.

CERTIFICATES, LICENSES, REGISTRATIONS:

Gaming license issued by the Tribal Gaming Agency

Food Handlers Permit.

ServSafe Certified or must obtain certificate within 60 days.
