The ideal candidate for this position would have previous pizza and dough-making experience. We specialize in high quality Neapolitan style pizzas and traditional Italian fare with a modern twist.
Minimum Qualifications:
- 2 years kitchen management experience
- 5 years previous kitchen experience in a restaurant or in similar culinary-minded setting
- Must have Manager Food Handler Certification or willingness to obtain one
- Experience with high-end pizza, stretching dough, and working a commercial or wood burning oven
- Catering or event experience is a plus
- Must be able to lift heavy objects and stand for 8+ hours
Responsibilities & Duties:
- Hire, train, and oversee a staff of kitchen employees
- Menu creation with creative culinary oversight that aligns with our operation
- Run the kitchen operations for large scale events that have multiple moving pieces during service
- Maintain kitchen safety, sanitation, and compliance with CA DOH codes
- Handle ordering for all produce, meats, cheeses, flour, bread, etc.
- Oversee weekly dough schedule and daily taste testing, supervise food quality control
- Monitor Cost of Goods and compile monthly reports
- Regularly update par & inventory sheets, prep lists, cleaning duties, recipes, vendor information, and order forms
- Create weekly kitchen schedule which minimizes overtime and overstaffing
