Job Description:
Delegate prep/service responsibilities to cooks.
Manage all BOH employees (prep cooks, line cooks, dishwashers, etc.)
Quality control all items/dishes for all services. Ensure line checks are completed
Be aware of and execute/direct FOH protocol.
Build and maintain positive working relationship and cohesion between FOH and BOH
Handle all HR matters, including, but not limited to:
Interview, hire and fire personnel.
Discipline staff members, when merited, in line with systems in place- write ups, etc.
Conflict resolution with staff members
Maintain food and labor costs, and communicate cost concerns to Sous Chefs and upper management.
Communicate regarding menu changes/issues, personnel changes/issues, vendor/product issues, etc.
Consult with and oversee Sous Chefs on ordering.
Compile/check invoices for accuracy. Regularly check prices from vendors to assess best costs, taking best quality into account.
Give specific direction to prep cooks on prep and receiving/storing/rotating product.
Consistently maintain a high level of cleanliness throughout the restaurant, including the dish station, kitchen, walk-in, prep areas and common areas.
Ensure that all staff has clean uniforms and all proper tools at each shift.

Minimum Requirements:
Minimum 3-5 years of kitchen supervisory experience
Minimum 3-5 years experience at a fine dining or upscale restaurant
A food-driven background and the ability to execute thoughtful, refined & composed dishes
Long tenure with previous employers (minimum 2 years at each job)
Excellent communication and organization skills

The ability to perform under pressure
