Sacred Rock Resort - Elk, CA, in Mendocino County, is seeking an organized and highly motivated individual, to build and work with our culinary team in one of the most beautiful newly renovated facilities, on the scenic bluff edge of the Mendocino Coast. The qualifed applicant will possess the following experience and knowledge:

- Control of all food, beverage, and labor costs in two restaurants, serving breakfasts to the guests of our 23 rooms, and dinner to our guests, tourists, and loyal local patrons.

- Negotiating pricing on all products and overseeing vendor quality.

- Maintaining food production quality within existing standards and establishing new standards as needed.

- Ability to collaborate with the Corporate F & B Director, General Manger/Owner's Agent on new dishes and service styles, in a way that emphasizes local product.

- Spanish language fluency is a plus.

- Knowledge and experience with wines and food pairings.

- A culinary education and practical experience commensurate with the industry standard for this position.

- Training new and seasoned staff in proper culinary techniques. Assist in recruitment as needed.

- Developing loyal, qualified BOH and FOH staff, by creating a safe and rewarding environment.

- Responsible for overall management of the Food & Beverage facilities on property with the collaboration of the Food and Beverage Director off-site, and on-site General Manager.

- Prepares and cook foods of all types, either on a regular basis or for special guests or functions.

- Supervises and coordinates activities of cooks and workers engaged in food preparation.

- Checks the quality of raw and cooked food products to ensure that standards are met.

- Checks the quantity and quality of received products.

- Administers production schedules and staff requirements necessary to ensure timely delivery of services.

- Instructs cooks and other workers in the preparation, cooking, garnishing, and presentation of food.

- Monitors sanitation practices to ensure that employees follow standards and regulations.

- Orders or requisitions food and other supplies needed to ensure efficient operation.

- Follows all recipes, specs, and control procedures.

- Promotes the following within the department and among all employees:

- Creates an atmosphere of fun for all guests.

- Encourages mutual respect, dignity and integrity with all employees, by setting positive examples at all times.

- Other duties may be assigned.

This take charge position reports directly to General Manager/Owner Agent and Culinary Director as needed.

The qualified individual should have ten years of experience in fine dining restaurants, and/or upscale Resorts/Inns as an Executive Chef. The compensation will commensurate with experience and talent.

Compensation: DOE

Employment package includes relocation assistance- housing accommodations on site available, subsidized Medical, Dental, and Vision insurance. 401K contribution matching up 3%
