Position Overview

We are seeking an experienced Executive Chef to lead the kitchen operations of our Japanese restaurant. The ideal candidate has strong expertise in Japanese cuisine, sushi, and yakitori, along with proven back-of-house management skills. This role requires both hands-on culinary excellence and leadership capability.

Key Responsibilities

Oversee all back-of-house kitchen operations as Executive Chef

Demonstrate mastery of Japanese cuisine, including but not limited to:

Sushi (Nigiri, Sashimi, Omakase)

Yakitori (binchotan grilling, chicken breakdown, tare & shio techniques)

Japanese hot dishes, seasonal and signature menu development

Design menus and establish consistent food quality standards

Lead, train, and manage kitchen staff (sushi, yakitori, hot kitchen, prep)

Control food cost, labor cost, inventory, and ordering

Ensure full compliance with health and safety regulations

Collaborate with front-of-house management to ensure smooth service flow and guest satisfaction

Qualifications

Minimum 10 years of experience in Japanese cuisine, including leadership roles

Strong expertise in Japanese dishes, sushi, and yakitori, with the ability to work hands-on

Deep understanding of fish handling, butchery, ingredient sourcing, and fire control

Proven kitchen management and leadership skills, including team building and training

Experience in high-end Japanese or Omakase restaurants is a strong plus

Japanese language proficiency is preferred (for kitchen or professional communication)

Strong work ethic, attention to detail, and commitment to long-term growth
