Little Billy’s is an upscale counter-serve take on the modern day diner, focused on breakfast and lunch specializing in wholesale but indulgent brunch items with signature griddle and pastry selections. Little Billy’s expects to show Newport Beach they are best in class in the breakfast, brunch and lunch category.

Line Cook Position

We are seeking a skilled and passionate Line Cook to join our culinary team. As a Cook, you will be responsible for preparing and cooking a variety of dishes according to recipes, menus, and special dietary or nutritional restrictions. The ideal candidate should have a strong understanding of food safety practices, excellent culinary skills, and the ability to work efficiently in a fast-paced environment. Here are the duties broken down:

Line Cook Qualifications and Requirements:

● Minimum 3 years working in a restaurant setting

● Consistent and reliable

● Have the ability to lift and carry 35-50 lbs on a regular basis

● Flexibility to work evenings, weekends, and holidays as needed.

● Have the ability to stand for long periods of time

● Must be 18 years old or older

● Food Handler’s Card

Line Cook List of Responsibilities and Expectations:

● Provides a pleasant and efficient customer-focused experience

● Great team player with staff members

● Maintains a clean and orderly workstation

● Contributes to inventory management

● Work safely around kitchen equipment and report any maintenance issues to Leadership

● Assist in dishwashing and cleaning when necessary

● Maintain personal knowledge by completing in-house training and stay up-to-date on any changes

● Complete all opening or closing tasks as assigned

● Prepare and cook menu items according to recipes, quality standards, and presentation guidelines

● Follow proper food handling, storage, and sanitation procedures to ensure compliance with health and safety regulations

● Coordinate with kitchen team members to ensure timely preparation and delivery of orders

● Ability to work in a fast-paced high-volume work environment

● Monitor and maintain inventory levels of food and kitchen supplies, and communicate shortages or discrepancies to management

● Follow proper food handling procedures to maintain freshness and prevent cross-contamination

● Strong knowledge of food preparation techinques and cooking methods - for example know preparation of all egg styles cooked to order

● Versatility in cooking tasks, including grilling, roasting, baking, and frying

Prep Cook and Dishwasher Role:

Prep Cook/Dishwasher List of Responsibilities and Expectations:

● Prepare ingredients by washing, peeling, chopping, slicing, and dicing vegetables, fruits, meats, and other food items according to recipes and instructions from Leadership

● Assist in the preparation of sauces, dressings, marinades, and other components needed for recipes

● Measure and portion ingredients accurately to ensure consistency in flavor and presentation

● Follow proper food handling procedures to maintain freshness and prevent cross-contamination

● Organize and stock kitchen stations with necessary ingredients and equipment

● Maintain cleanliness and sanitation standards in the kitchen, including equipment, countertops, and storage areas

● Dispose of waste and recyclables properly, following established guidelines

● Adhere to all safety and health regulations to ensure a safe working environment

● Collaborate with other kitchen staff to ensure efficient workflow and timely preparation of meals

● Assist with inventory management by monitoring ingredient levels and notifying management when supplies need to be replenished

● Clean dishes quickly, efficiently and with care

● Store all cleaned plates/pots/smallwares, etc in proper place

● Assist with kitchen cleaning tasks as needed, such as mopping floors and wiping down surfaces

● Follow proper procedures for handling and storing cleaning products and chemicals

● Empty trash bins regularly and dispose of waste properly

● Must be 18 years old or older

Prep Cook/Dishwasher Qualifications and Requirements:

● Two years minimum experience in a cafe or restaurant

● Proven experience working as a prep cook or in a similar role in a professional kitchen environment

● Ability to work in a fast-paced high-volume work environment.

● Strong work ethic and willingness to learn

● Knowledge of basic cooking techniques, food safety standards, and kitchen equipment

● Able to work flexible hours, including evenings and weekends

● Ability to follow recipes and instructions accurately.

● Excellent knife skills and proficiency in using kitchen tools and equipment

● Flexibility to work evenings, weekends, and holidays as needed

● Strong attention to detail and organizational skills

● Ability to work efficiently in a fast-paced environment while maintaining quality and consistency

● Effective communication skills and the ability to work well within a team

● Flexibility to work evenings, weekends, and holidays as needed
