We are looking for an experienced Pit Master/ Kitchen Boss to join our team! We need our candidate to well-rounded with an understanding of:
· Food and labor costs
· Budgets (understands P & L’s)
· High Volume Experience (EC or Sous position in a $3mil+ facility)
· Banquets, Dining Room service and Off-Site Catering
· Clean and safe working environments
· Team leadership skills
· Strong mentoring/ teacher mentality
You will be preparing and smoking various meats in our J&R wood smoker and leading a team of 25 culinary crew members. You must be passionate about creating exceptional quality food with previous experience as a leader, you are able to manage multiple priorities and contribute to a friendly and productive team atmosphere.
Responsibilities:
Inspect and clean food preparation areas, such as equipment and work surfaces or serving areas to ensure safe and sanitary food-handling practices
Ensure freshness of food and ingredients by checking for quality, keeping track of old and new items, and rotating stock
Ensure food is stored and cooked at the correct temperature by regulating the temperature of smoker.
Season and cook food according to recipes
Rotate meats to ensure even smoking
Qualifications:
Previous experience as a Pit Master preferred
Serve Safe Manager certification (or must be willing to attain)
Effective communication skills
Ability to lift 30+ lbs
Ability to work standing for 8+ hours
Ability to work on a smoker with a live fire and a smokey environment
