Casual neighborhood brewpub/bistro seeking experienced cook and kitchen manager for a leadership role. Kitchen open hours: Tuesday through Sunday, 9am to 9pm, 10pm on weekends. Brunch, Lunch & Dinner, small and large events/banquets, snacks, happy hours, quality scratch kitchen with streamlined/efficient menus.
We like to source local produce and high-quality ingredients with approachable crowd-pleasing food. Familiarity with local purveyors and knowledge of food trends a plus. This is an active cooking role, as well as a leadership position. The position involves organization, inventory, ordering, paperwork, prep & cooking on the line during service, as well as planning, logistics, problem solving, assisting with hiring, scheduling, training, event planning, menu development, & business decisions. Must be fast, calm, cool to your colleagues, a great dishwasher and a damn good cook. Must have kitchen manager certificate and knowledge of all basic cooking techniques, knife skills, meat temps, experience with smoking and a variety of cooking regions and genres desired.
We are looking for someone with good judgment, leadership and analytical skills - knows how to spot issues and solve them before they become problems. Knows kitchen safety issues, labor/break rules, and how to manage a staff etc. We are a rapidly expanding business and growing team, and there is room for advancement within this position and this company, if you are interested. If you just want to do your job well and work a lot, that works too. The ideal candidate loves to cook and likes to work (50+ hours/week or more if you want, 5-6 days a week). We want someone who wants responsibility and can handle it, is skilled at mentoring young staff and leading a team, and ALWAYS has a positive attitude and can work closely with the front-of-house staff on executing a winning food program. Sample schedule: (this may vary based on desired days off + scheduling of the rest of the team)
Tuesday-Saturday: 11am-9pm (with breaks). Earliest in-time 8am, latest out time 11:30pm.
Must be able to lift, bend, twist, stand for long hours, withstand cold and hot temps. Legal to work in the US, speak English and Spanish preferred. (sign language also a plus)
Minimum 5 years+ kitchen experience, with kitchen management/sous chef/leadership experience required.
