What we are looking for is a true leader who can help to round out our management team. We are looking for individuals with previous experience in a sous chef role, who are eager to lead a solid crew of full time & on call cooks and dishwashers in all day to day tasks. This position will collaborate directly with the Executive Chef and Sous Chef to achieve our team goals. Planner
Utilize a weekly planner to assist in your daily organization
Take notes on training, recipes, staff, events, etc.
Menus
Learn all menus/dishes through hands on approach to all prep/events
Daily Responsibilities
Oversee all day-to-day kitchen operations
Organization: Fully responsible for ensuring proper kitchen and warehouse organization
Collaborate with Chef / Sous Chef to ensure completion of all tasks
Ensure all cook/dishwasher duties are completed daily
Check in orders: Call vendors & communicate with Chef/Sous chef regarding any shorts or issues
Prep: Ensure all prep is accomplished at the highest quality and in a timely manner through consistent training, coaching, and hands on assistance when needed
Training: Capitalize on all training opportunities
Be a leader, motivator, mentor and role model to the BOH staff.
Embrace and fulfill the core values and culture of MIHO.
Tastings: Oversee tastings as needed
Family Meal: Oversee and/or execute on a daily basis
Communication: Be in constant contact with chef/sous chef regarding orders, staffing issues, prep timing, etc.
Ordering
Learn order systems and be capable of assisting Sous Chef in Executive Chefs absence
Prep Sheets: Learn system and have the ability to execute when necessary
Events
Lead the full range of events at the highest level
Learn to drive all company vehicles needed to execute events
Have a comprehensive understanding of all event details (staffing, locations, menus, packs, setups, vehicles, timing, etc.) at all times
Errands
Assist in weekly errands when necessary
Family Meal Program
Ensure family meal is executed during every prep shift and duties are dispersed amongst the staff evenly to keep production high
