About Lokma
Lokma is a well-loved San Francisco restaurant serving Turkish-inspired brunch and dinner since 2018. We’re known for warm hospitality, vibrant flavors, and creative twists on traditional dishes. We’re refreshing our menu and seeking a consulting chef with deep Turkish/Mediterranean expertise to design new plates that fit our kitchen and brand.
The Role
This is a short-term consulting role with a clear scope: develop new menu items, provide standardized recipes, and train our kitchen team for execution.
Scope of Work
Develop 8–12 new brunch & dinner dishes (mix of meze, mains)
Provide standardized recipes with measurements, cooking steps, and plating notes
Deliver food costing for each dish
Train current kitchen staff on execution
Work within our existing equipment and workflow
Requirements
Proven experience with Turkish and/or Mediterranean cuisine
Background in menu development and recipe standardization
Knowledge of food costing and portion control
Ability to work on-site in San Francisco during R&D and training
Strong collaboration and communication skills
Compensation
Project Rate: $3,000–$4,000 for complete deliverables (3-week max timeline)
Hourly Rate: $50–$65/hr (with maximum hours agreed before project start)
Rates negotiable for highly qualified candidates
