Service Systems Associates at the San Francisco Zoo is hiring for Prep Cooks!
Prep Cook Job Purpose:
The Prep Cook has a vital role in the kitchen. As second-in-command, they have a large amount of responsibility in the kitchen. Working alongside the Executive Chef and the Sous Chef, the Prep Cook is responsible for planning and directing food preparation in the kitchen. This involves a large degree of supervising other kitchen staff, as well as keeping an eye out for problems that arise in the kitchen and seizing control of a situation at a moments notice.
The Prep Cook works alongside Executive Chef to manage daily kitchen activities, including overseeing staff, aiding with menu preparation, ensuring food quality and freshness, and monitoring ordering and stocking. Provides meal quality and consistency by following designated recipes, plating practices and service standards.
Prep Cook Job Duties:
Leads kitchen team in sous chefs absence
Resourcefully solve any issues that arise and seize control of any problematic situation
Provides guidance to junior kitchen staff members, including, but not limited, to line cooking, food preparation, and dish plating
Ensure that the kitchen operates in a timely way that meets our quality standards
Oversees and organizes kitchen stock and ingredients
Ensures a first-in, first-out food rotation system and verifies all food products are properly dated and organized for quality assurance
Keeps cooking stations stocked, especially before and during prime operation hours
Assists with training new kitchen employees to SSA kitchen standards
Manages food and product ordering by keeping detailed records and minimizing waste and over ordering
Works with, monitors and helps improve existing systems to reduce food waste
Includes waste reporting and staff training on processes Supervises all food preparation and presentation to ensure quality and food safety standards
Includes staff training on production, building
Includes visual and taste testing of food at beginning and throughout the day
Works with sous chef to maintain kitchen organization, staff ability, and training opportunities
Comply with, train employees in and enforce sanitation regulations and safety standards
Facility equipment management including:
Verify that food storage units all meet are consistently well-managed
Reporting equipment issues
Verify all temp logs are maintained and up to date Assists Executive chef with:
menu creation, including concept, production and taste testing
recipe management and cost(s) control Maintain a positive and professional approach with coworkers and customers
Coordinates with management team on supply ordering, budget, and kitchen efficiency and staffing
Catering
Help in the preparation and design of all food and drinks menus
Assists in the planning and execution of catering events
Layout and setup of remote kitchen areas
Assembling and transport of all necessary kitchen equipment
Produce high quality plates both design and taste wise
Includes staff training on plating and presentation, as well as, flavor profiles, allergens, and components
Ensure that the kitchen operates in a timely way that meets our quality standards
Effective management of catering timelines, delivery windows and execution timing
Post event reporting including, but not limited to:
event follow up
food presentation memorandum
food reclamation or waste reporting
