The Sausage Maker is responsible for grinding raw meat product from trim that was cut by the Butchers. This includes plain grind and sausage made from Beef, Pork, and Lamb/Goat. They emphasize accuracy for following recipes and standards of operation for each different product and task. Communication with the Meat Labeler and Butchers is essential for managing work flow and maximizing efficiency.

With experience Sausage Makers will plan their weekly tasks with the Production Manager and execute them accordingly with precision. Must have Integrity for keeping orders organized and making sure each customer's product is kept separate and packed according to its specifications. Time management for balancing different orders and ensuring that species and allergens are separated by time and space are of utmost importance.

Key Performance Outcomes:

100% Accuracy for following recipes and using proper ingredients

100% Of packages are free of contaminants such as hair or glove bits

Spoilage is prevented completely by product rotation and processing in a timely fashion

Spice Inventory is maintained and products ordered, maintain availability

Customer specifications must be followed accordingly

Key Responsibilities:

Species, Allergens, and Inedible products are separated by time and space according to SOP

Raw Grinding logs are maintained and temperatures taken according to SOP

Label all products and document where they are stored in freezer or in retail cooler

Maintain sanitary conditions throughout shift and break down room at end of day

Sanitize stuffer & grinder between species, confirm clean & ready for production on following day

Machines are set up and broken down and stored properly to prevent damage or contamination

Team work with Smoke house Production/ Brine team is required

Report any mechanical issues or paperwork documentation errors immediately

Qualifications:

2+ years in production, line work, or similar back of house environment

Strong written and verbal communication skills

Must be able to lift 50lbs regularly
