We are currently hiring for a Full-Time Sous Chef that has an availability of Monday-Friday between 5:30am-4:00pm with some occasional weekends for private events. The Sous Chef is responsible for the culinary quality, service and experience of the operation. Motivates, trains, develops and directs team members to deliver delicious, nutritious food, exceptional service, and accomplish daily goals and projects.

Daily Duties:

· Understand completely all company policies, procedures, standards, specifications, guidelines, and training programs

· High volume, complex foodservice operations experience

Assist Executive Chef/Exec Sous Chef in supervising production in the outlets/banquets

Assist Chef a/Exec Sous Chef in ordering/requisitioning food items for the outlets/banquets

· Prepares all food items for catering and bulk food production

· Participates in all areas of food preparation and production as well as other kitchen-related responsibilities

· Follows recipes, portion controls, and presentation specifications as set by the company standards

· Support special catering events and will also provide culinary instruction and/or demonstrations of culinary techniques

Assist with adherence to cost control procedures by reviewing product, labor and supply costs

Ensuring competitive operation and analyzing/utilizing trends in culinary arts

Pro-active in problem solving

Maintenance of kitchen facilities

Work 58 hours a week

Responsible for inventory wish list. Reviewing inventory with Executive Chef ensuring adequate supplies and products are on hand

· Attending and conducting regular kitchen meetings to ensure coordination of activities, and review of policies and proceduresThis position will spend 100% of the time standing

· The individual must be able to transport up to 50 pounds on occasion and up to 35 pounds regularly

· Adheres to the Company’s guidelines on proper food presentation and garnishes for all dishes

· Prepare all required paperwork, including forms, reports and schedules in an organized and timely manner

· Ensure that all equipment is kept clean and kept in excellent working condition through personal inspection and by following the company's preventative maintenance programs

· Support department in ensuring compliance with health requirements, City Health Department regulations, and Department of Labor regulations as they pertain to the operation

· Ensure all products are received in correct unit count and condition and deliveries are performed in accordance with the company's receiving policies and procedures

· Assist with monitoring the inspection and delivery of food, while ensuring the spoiling and contamination of food is prevented

· Ensuring that standards of service, storage and stock rotation are followed

· Responsible for closing the kitchen according to company's standards Ensure all employees are out of the premises and have properly clocked out from their shift

· Directing food preparation in accordance with established standards of quality quantity control, taste and presentation

· Supervising the creation of attractive food displays

Qualifications:

· English language and professional communications skills are required

· Understanding of professional cooking and knife handling skills

· Understanding and knowledge of safety, sanitation and food handling procedures

· Must have a current food handlers’ card

· Must have problem solving abilities, think on feet, be self-motivated, and organized

Catering experience 4+ years

· Good working knowledge of accepted sanitation standards and applicable health codes

Some progressive culinary/kitchen management experience, depending upon formal degree or training

Institutional and batch cooking experiences helpful

Comprehensive knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation

ServSafe certified - highly desirable

Basic mathematical skills necessary to understand recipes

· The ability to lead/direct/inspire all kitchen/stewarding staff

· Ability to work calmly and effectively under pressure

· Experience with off-site catering and event production/execution

· Flexible schedule is important as we book catering jobs on different days and times

· Must be punctual

· Thorough working knowledge of hot and cold food preparation

· Understands and complies with standard portion sizes, cooking methods, quality standards and kitchen practices

· Leads by example, setting the pace and standards

· Must be detail oriented in following the basic recipes, cooking methods

· Experience in Mexican, Latin American, Mediterranean food is a plus

We are currently hiring for a Full-Time and Part-Time Sushi Chef that has an availability of Monday-Friday between 6:00am-4:00pm with some occasional weekends for private events and with prior sushi experience looking to improve their skills with our team. The sushi chef is responsible for preparing an assortment of sushi rolls from start to finish in the kitchen. Will also be responsible for helping to clean and organize kitchen at end of service.

Daily Duties:

· Performs the proper preparation of raw and cooked sushi items as dictated by menu

· Adheres to the Company’s guidelines on proper food presentation and garnishes for all dishes

· Properly making sushi rice

· Knows how to handle fish and ingredients for sushi preparation

· Keeping sushi station up to sanitation and safety standards

· The individual must be able to transport up to 50 pounds on occasion and up to 35 pounds regularly

· Must be able to read and understand basic cooking directions and execute recipes accordingly

· Ensuring all pack outs of food and equipment are correct and ready to go for servers and drivers

· Creating an appealing presentation and garnishes

· Ability to work in a fast paced environment and meet deadlines

· Performs additional responsibilities, although not detailed, as requested by the chefs and Operations Manager

Essential Responsibility:

· Prepares food in a good safety, sanitation and timely manner for successful deliveries

· Must be able to work in a team environment as well as independently

· Has understanding and knowledge to properly use and maintain all equipment in station

Qualifications:

· English language and professional communications skills are required

· Basic understanding of professional cooking and knife handling skills

· Understanding and knowledge of safety, sanitation and food handling procedures

· Must have a current food handlers’ card

· Minimum 2 years cooking experience with knowledge of safe food handling and preparation procedures in the restaurant and catering world or 3-4 years catering prep/line cook experience

· Knowing the proper methods of cutting fish, meat and vegetables

· Takes direction well and is a team player

· Must have problem solving abilities, think on feet, be self-motivated, and organized

· Ability to work calmly and effectively under pressure

· Shifts from 6am-4pm

We are currently hiring for a Full-Time Line Cook that has an availability of Monday-Friday between 6:00am-4:00pm with some occasional weekends for private events. The line cook is responsible for the daily preparation of food items in the kitchen. Will also be responsible for helping to clean and organize kitchen at end of service.
