Innovative and dynamic award-winning restaurant in Placerville, CA serving fresh American cuisine is seeking an experienced Head Cook/Chef to join our energetic team. We are looking for an individual who has a passion for cooking and creativity, balanced with the ability to run a financially sound kitchen. This position works directly with the General Manager and owners in managing food and labor costs, staff training, and production and execution of menu items. This is a “working chef” position.
The restaurant has been voted #1 in various categories over the past several years, including Best Overall Restaurant/Best Patio/Best Server/Best Cocktails/Most Romantic. With the current COVID 19 Pandemic, the restaurant continues to successfully innovate and adapt to changing requirements with increased take-out options and a greatly expanded outdoor dining area.
GENERAL DESCRIPTION
The Head Cook/Chef is responsible for supervision of kitchen and active participation in food preparation (including “running the line”), cost control, inventories, portion control, menu planning, recipe development and menu specifications. A qualified candidate will be well organized with a passion for cooking and the ability to work all positions in the kitchen. Great communication skills and a positive, “whatever it takes” attitude are essential. Team building and kitchen leadership/management skills are essential.
ESSENTIAL FUNCTIONS OF THE POSITION
-Supervising all kitchen staff during shift
-Maintaining cooking standards to ensure consistent, high quality food
-Proper handling and rotation of food products
-Assisting in development of kitchen guidelines and active involvement in new menu ideas
-Ability to work all stations in kitchen, expedite on the line, and cover all kitchen positions
-Thorough understanding of local, state, and federal health and sanitation laws
-Collaboration on weekly specials with management
-Ability to stand and remain active and agile for entire shift. Good sense of balance, ability to lift, bend, kneel, stoop and wipe
-Ability to frequently lift and carry food, beverages, and other items greater than 35 pounds and ability to transport up to 70 pounds regularly
-Ability to communicate constructively with all co-workers
-Professional demeanor and attire
-Professional oral and written communication skills, including proficiency in MS Word/Excel
-Team player with strong leadership skills
-Honesty and high level of integrity
-Attention to detail
-Serv-Safe certification is preferred (required within ninety days of hire)
-5 years restaurant and supervising experience
This is a full time career position for nightly dinner and selected lunch shifts (currently open 5 days/week due to staffing/COVID 19 restraints). Position is hourly with compensation DOE. Additional benefits include tip sharing, PTO, Food discounts, and professional development stipend
