We’re a growing culinary group behind several innovative concepts—including Perfect Slicez by M. Dragon, Fyah Wings, and Beyond Comfort Food—expanding our artisan bread and pizza dough program. We value precision, flavor development, and reliability, and we’re looking for a baker who brings craft and consistency to the bench.
Role Summary
The Bread Baker will produce a focused lineup of artisan breads (loaves, rolls, sandwich formats) and scratch‑made pizza doughs. The ideal candidate understands fermentation, baker’s percentages, and production flow, and can maintain high standards with minimal supervision.
Key Responsibilities
Mix, ferment, shape, and bake a daily selection of breads to spec
Prepare pizza doughs (preferments, cold fermentation, portioning/balling)
Execute both Neapolitan‑ and New York–style dough profiles
Manage production timelines, proofing, and oven operations (deck/wood‑fired preferred)
Maintain a clean, organized, and food‑safe work area; uphold sanitation logs
Assist with scaling, labeling, inventory rotation, and end‑of‑shift breakdown
Qualifications
2+ years professional bread‑baking experience in an artisan or wood‑fired environment
Strong command of fermentation, hydration control, shaping, scoring, and bake curves
Hands‑on experience with pizza dough formulas and cold‑fermentation programs
Ability to work independently, prioritize, and meet production targets
Reliable, punctual, and detail‑oriented; excellent communication with kitchen leadership
California Food Handler Card (or ability to obtain within 30 days)
Physical ability to stand for extended periods and lift up to 50 lbs
Schedule & Work Conditions
Part‑time: 2 days/week (set days; early‑morning starts typical for baking)
Additional shifts may be available during peak periods and special events
