About Fort Logan: The Colorado Mental Health Institute at Fort Logan (CMHIFL) is one of two state hospitals serving our community. The vision of CMHIFL is to provide the highest quality mental health services to persons with complex, serious, and persistent mental illness within the resources available. Our mission is to support those individuals in achieving their recovery goals and reaching their full potential. CMHIFL provides inpatient treatment to adult patients, generally between the ages of 18-59. The hospital currently has 94 adult inpatient beds, over four treatment units and is scheduled to open an additional 44 beds (two units) in August 2022. These two forensic units will be dedicated to providing psychiatric stabilization and restoration treatment to individuals opined incompetent to proceed as a result of their mental illness. Medical services, occupational therapy, neuropsychological-rehabilitation services, and trauma-informed care services are available for all patients throughout the hospital. Description of JobThese positions are eligible for shift differential on the weekends. About this Work Unit:The Nutrition Services Department will provide quality meals that meet the nutritional needs of the patient population and are prepared in a manner that meets established standards. About this Position:This position ensures safe, compliant, and effective completion of food service production within the Nutrition Services Department kitchen, including meal preparation, cooking, baking, portioning, sanitation, documentation, and supervision. Primary Job Duties:Production Cooking:Prepares meals following standardized recipes, written instructions, portion sizes, production sheets, food safety guidelines, etc. Assures food is attractive, appetizing, and at the proper temperature. Complies with applicable laws, regulations, policies, and standards including Joint Commission, Colorado Dept. of Health, Colorado Dept. of Education, and the standards and regulations set by the hospital and nutrition service.

Makes appropriate menu substitutions, and documents and submits changes when necessary.

Tastes and visually inspects product for quantity and quality prior to service and makes adjustments as necessary.

Makes recipe modifications to improve quality while ensuring adequate nutrition.

Baking:Prepares baked goods using standardized recipes. Items include bread, cakes, cookies, pies, puddings, cobblers and similar items.

Determines changes in bakery production.

Inspects product by tasting and visually for quantity and quality prior to service and makes adjustments as necessary.

Revises and/or implements new recipes for baked goods to maintain quality.

Work Leader:As a work leader, this position is responsible for daily shift supervision including assigning tasks, monitoring progress and workflow, checking the product, scheduling work, and establishing work standards.

Trains and works alongside employees on regularly assigned tasks, new techniques, methods, and standards. Determines when additional training may be necessary.

Oversees tray line operations and determines if trays are accurate.

Participates in work leader’s meeting; presents issues related to workflow, production, employee morale, etc., determines if an action plan is necessary and discusses this with kitchen managers.

Sanitation and Document Compliance:Responsible for proper documentation of temperatures (food items, refrigerators, and freezers), production records, cleaning schedule, food safety and sanitation, and any other necessary documentation. Assures that all written documentation and reports from each shift are completed on a daily basis. Follows CMHIFL policies regarding utensils/plate/bowl counts, key monitoring, knife inventory, food auditing, operation, and minor servicing of equipment.

Determines the correct action to be taken if food is not at an appropriate temperature.

Monitors adherence to proper labeling and dating of food and ensures F.I.F.O. practices are followed throughout the kitchen.

Determines if items should be utilized, replaced, and/or discarded.

Ensures all food service equipment is kept in working order and the kitchen is kept clean and sanitized. Determines when it’s necessary to place a work order.

Training:

Attends and actively participates in all mandatory/assigned training and successfully completes any/all testing or other requirements for such training. Maintains required certifications as appropriate.

Ensures that all annual mandatory/assigned training is completed within the required timeframe

Experience in food service (specifically with baking)

Certification of Servsafe Class

Working in a Hospital or Living Centers

Highly Desirable Competencies:

Knowledge of institutional food service procedures and practices,

Knowledge of health requirements in the operation of a food service unit,

Knowledge of health hazards in food service and the necessary precautionary measures,

Knowledge of weights, measures, (e.g., food scales, measuring cups, and spoons) and food measurement techniques.

Knowledge of techniques used in mixing food (e.g., gelatin, pancake batter, salad dressing, scrambled eggs, etc.).

Knowledge of meat and vegetable preparation methods.

Knowledge of cooking methods (e.g., frying, deep-fat frying, boiling, or baking).

Knowledge of the use of kitchen utensils in serving or portioning meals.

Knowledge of food safety related to handling and storing cooked foods, serving and storing temperatures, or reading food thermometers.

Ability to read English at the level necessary for interpreting and understanding written recipes, menus, nourishment labels, diet slips, portioning sheets, and policies and procedures.

Ability to perform basic mathematics (addition, subtraction, multiplication, and division) as related to calculating or converting units of measure for determining proper amounts of food ingredients for mass food production.

Ability to clean, cut, cube, grind, and tenderize meat.

Ability to clean, peel, dice, grate, slice, and chop vegetables.

Ability to measure food ingredients using food scales, measuring cups, or spoons.

Ability to mix food items (e.g., gelatin, pancake batter, salad dressing, scrambled eggs, etc.).

Ability to boil food items and operate a jacketed steam kettle in a safe and effective manner.

Ability to fry food items and operate a grill or tilt grill in a safe and effective manner.

Ability to bake food items and operate a gas, rotary, or convection oven in a safe and effective manner.

Ability to understand and execute oral and written instructions,

Interpersonal skills,

And teamwork skills.

Conditions of Employment:

ALL CDHS employees (non-direct contact): CBI name check, ICON Colorado court database, Medicare fraud database, Reference checks, Professional License verification (licensure requirements), and drug screening (commercial Driver’s license)

Shift Work – May work weekends, holidays, and various shift

Must pass a pre-placement physical/medical screening: TB Test
