Executive Pastry Chef – Grand Lake Lodge

The Executive Pastry Chef’s primary job at the Grand Lake Lodge is lead the pastry department’s production of all breads, pastries, desserts and packaged food items on property. They will manage a small pastry team and work with the entire kitchen management team to ensure success of the department. The pastry chef will be responsible for adjusting staffing and production to match the business levels throughout the season.

Core Responsibilities:

The core responsibility of the Pastry Chef is to ensure that all pastry kitchen items produced on property are of high quality and meet all food safety requirements. A list of specific duties is as follows:

• Enforce and verify daily prep and cleaning checklists with pastry team

• Work with kitchen management team to order, inventory and rotate all ingredients

• Create and enforce organization standards for all pastry ingredients and prepared product

• Work with the property Chef de Cuisine and Corporate Chef to create morning pastry, restaurant dessert and banquet dessert menus

• Work with the Corporate Chef to create retail food items to be sold in the on-site retail store

• Enforce property kitchen policies, procedures, and best practices

• Prepare reports to inform Senior Management of weekly progress

• Communicate effectively with Front of House managers and employees

• Prepare for and conduct menu trainings for Front of House staff

Knowledge and Skill Requirements:

• Thorough knowledge of baking and pastry technique

• Willing to develop knowledge of local Colorado cuisine, ingredients and dessert trends

• Possess leadership qualities to oversee employee performance and motivation. Must be adept in conflict resolution as it relates to personnel and guest satisfaction

• Possesses strong business acumen, capable of looking at each decision through the lens of a business owner and operator

Additional Requirements:

• Should be able to work alone and in a team environment

• Should be able to communicate effectively

• Needs to have excellent management and organizational skills

• Local Health Department and Food Safety Knowledge

• Proof of eligibility to work in the United States
