Position: Sushi Chef
Overview:
We are seeking a highly skilled and creative Sushi Chef to join our culinary team at Sakana Nikkei, a contemporary Japanese-Peruvian fine dining restaurant. The ideal candidate will have a deep knowledge of traditional sushi techniques, a refined eye for detail, and a passion for exceptional quality, consistency, and presentation.
Key Responsibilities:
Prepare sushi, sashimi, nigiri, and maki rolls to the highest standards of taste, presentation, and hygiene.
Ensure all seafood is handled, stored, and prepared in accordance with health and safety guidelines.
Collaborate with the Executive Chef and culinary team to create seasonal and signature Nikkei-style sushi dishes.
Maintain cleanliness and organization of the sushi station and equipment at all times.
Train and guide junior kitchen staff and sushi assistants as needed.
Monitor inventory levels, assist with ordering, and minimize food waste.
Uphold and execute food safety protocols and kitchen SOPs.
Engage with guests when appropriate to explain dishes and provide an elevated dining experience.
Qualifications:
Minimum 3–5 years of experience as a Sushi Chef in a high-end or fine dining restaurant.
Deep knowledge of Japanese ingredients, sushi preparation techniques, and knife skills.
Experience with Nikkei (Japanese-Peruvian) cuisine is a strong plus.
Excellent time management, organizational, and leadership skills.
Ability to work in a fast-paced environment with grace and precision.
Strong attention to detail and commitment to quality and consistency.
Culinary degree or relevant certification preferred, but not required.
