Seeking a talented and dedicated sous chef to join a great staff at a high end, busy, banquet facility.
An ideal candidate needs to be a teacher and mentor, timely and reliable. Arriving before staff, ready to lead and organize their day, by making sure the daily prep and functions are being completed in a timely manner.
Daily organization of all kitchen aspects; prep list, staff, functions, walk-ins, and storage rooms are key to a seamless running kitchen and will be the sous chef's responsibility to head up and delegate all items in order to get things accomplished.
Assisting executive chef in ordering, checking and receiving all kitchen orders, staff scheduling, inventory, and creating new menus are all tasks expected of the sous chef.
Culinary: the right candidate will be expected to do all butchering and filleting of meat and fish, hot sauces, any tasting menu prep and execution, special request and dietary needs, cooking of all entree proteins to proper temperatures, and Quality control of all things made by kitchen staff.
Most importantly, the kitchen and culinary staff at the facility are looking ideally for someone to fit in to an already well run routine. Someone that can follow instruction and do things the same way with high quality every time. Also bring something new to the table, their own flair for cooking.
