JOB SUMMARY
Assist the Food and Beverage Director in the areas of product quality, service, and profitability for all the food and beverage outlets, including banquets, bar service, room service, customer service, and any other duties regarding customer (internal and external) satisfaction. The position requires hands on activity, vigorous leadership for the team, and attention to detail.
JOB DUTIES
1. Represent the management philosophy of the Inn of the Governors/ Del Charro
2. Assist the F&B Director on daily routine duties
3. Uphold corporate policies and procedures as they exist
4. Be consistent in daily management with progressive discipline
5. Exhibit leadership with effective delegation of duties and responsibilities
6. Ensure that all employees within your department are properly trained to set standards and etiquette.
7. Be a role model with an open door policy, and lead by example helping F&B staff with drinks, bussing, greeting and hosting when under-staffed and during rush hours.
8. Understand and implement functions regarding the Food and Beverage Department and its relation to other departments.
9. Train, develop, organize and prioritize effective scheduling and staff needs.
10. Attend weekly management meetings. Have constructive issues to be discussed
11. Avoid social situations with any employee over whom you have work-related power
12. Maintain a well-dressed and groomed staff with clean uniforms
13. Exhibit and demand unquestionable work ethics
14. Be proactive in identifying potential breakdowns in the operation
15. Be familiar with all emergency procedures
16. Compute daily bar breakage report.
17. Handle all guest inquiries, requests and complaints following hotel procedures to ensure complete customer satisfactions at all times.
18. Perform any other duties assigned by F&B Director of GM.
QUALIFICATIONS
Physical Requirements:
1. Prolonged sitting and viewing of computer terminal
2. Office access limited and confined
3. Constant standing, bending, and walking required.
4. Ability to lift up to 50 pounds at a time
Licenses and Certifications:
1. New Mexico alcohol servers certification
Education & Experience
1. Five years of experience in a full-service restaurant (including bar)
2. Two years or more (of the above) as a supervisory role.
3. Experience in banquets and catering preferred
4. Prior experience with the ALOHA system preferred
5. Experience/education in food, beverage, and liquor inventory management preferred.
Skills & Abilities:
1. Knowledge of restaurant, bar controls, basic server standards, menu design, food cost, and food production.
2. Ability to plan and handle stressful situations in a calmly manner.
3. Ability to communicate, orally and in writing, concerns to departments regarding internal controls.
4. Ability to provide accurate financial information.
5. Ability to recognize and correct errors in daily work.
6. Ability to calmly and effectively diffuse any confrontational issues with internal and external customers.
7. Ability to recognize errors in invoices to avoid erroneous disbursements.
8. Ability to calculate Food & Beverage cost of sales.
9. Ability to meet deadlines.
10. Ability to work Server and Bar shifts when and if short-staffed and rush hours/peak season.
