The Role
This multi-faceted role requires a unique blend of culinary expertise, logistical planning, and team management. As the Catering & Production Manager, you will be the driving force behind the seamless execution of all our catering services, from kitchen to on-site delivery. You will be responsible for overseeing the entire operation of our commissary kitchen, managing a fleet of mobile kitchen trucks, and ensuring an exceptional culinary experience for every client.
Key responsibilities
Event and job scheduling: Organize and manage all logistical and scheduling needs for events, daily production crews, and promotional launches.
Commissary kitchen management: Oversee the daily operations of our commissary kitchen, maintaining the highest standards of food safety and efficiency.
Purchasing and inventory: Order all food and supplies, manage tight inventories, and control costs to ensure profitability.
Mobile kitchen logistics: Supervise the loading of mobile kitchen trucks for daily breakfast and lunch services, ensuring all necessary equipment and supplies are on board.
Menu creation: Develop creative and appealing menus tailored to the specific needs and preferences of different crews and event clients.
Crew communication and management: Communicate daily schedules and prep lists to kitchen and mobile crews, and manage multiple teams simultaneously to ensure smooth, on-time service.
Promotional events: Organize specialized promotional events for companies launching new products, coordinating the catering to complement the brand's identity.
Qualifications
Proven catering experience: A minimum of five years of experience in a catering management role, either as a banquet manager, catering chef, or event planner.
Production catering knowledge: Experience with catering for television and motion picture crews is a significant asset.
Culinary background: A solid knowledge of food and a passion for creative and high-quality cuisine is essential.
Exceptional organizational skills: The ability to handle complex logistics and manage tight inventories in a high-pressure environment.
Flexibility and adaptability: A flexible schedule is required, as the demands of production and event work can be unpredictable.
Strong communication skills: Excellent interpersonal skills are needed to coordinate with clients, manage staff, and liaise with vendors.
Leadership abilities: A track record of effectively managing and motivating kitchen and on-site crews.
