ZZ's Club is hiring experienced Sushi Cooks to join our team!
A private membership club that originated in Miami, ZZ's Club is an exclusive, modern social space designed for those individuals who appreciate the highest caliber of culinary, hospitality and entertainment. We are a home away from home for our members, a distinguished clientele that expects precise execution and exquisite attention to detail.
RESPONSIBILITIES:
Prepare all food products according to the prescribed methods, both during service and prior preparation
Follow all internal and state regulations such as DOH/Food & safety/HACCP/Beverage
Complete mise en place list in the time allotted, making sure all sections of sushi are ready for each service
Acquire recipe knowledge and section setup to smoothly execute service
Ensure all items on station are properly stored, labeled and dated
Manage inventory levels for a wide range of raw fish and other ingredients
Ensure consistent menu execution by using tools such as line checks, menu change SOPs, and recipes
Acute attention to detail in the food preparation process, mastering quality control
Comply with nutrition and sanitation regulations and safety standards
Additional duties as assigned by management
REQUIREMENTS:
At least 3 years of experience in high volume and fine dining restaurants.
Previous experience in Michelin-starred (1, 2, or 3) and/or NY Times (2 or more stars) is preferred.
A Strong knowledge of Japanese Cuisine Experience required
This position requires a flexible schedule and weekends are necessary.
Have excellent communication and organization skills.
