Tall John’s is hiring a dedicated Line Cook to round out our kitchen team. This is a full-time, hourly position with comprehensive benefits (competitive pay, health insurance, life insurance, paid time off, staff meal, discounts) & your share of a kitchen gratuity that adds to your base pay based on restaurant sales volume. We’re an independent & locally owned/operated restaurant focused on providing a genuinely excellent, not-corny customer experience. Our food is the cornerstone of this approach; you'll work alongside passionate, talented, supportive cooks who care deeply of the quality of the food they make. Tall John's chef/owner, Trevor Payne, works shifts in the kitchen alongside his team 5 nights a week. This is not a corporate restaurant kitchen with shitty management. The employee's experience is just as important to us as the customer's. The BOH team supports each other. We make room for each other to take time off when it's needed, whether for health, family or vacation.

COMPENSATION

- $19 hourly rate + your share of the 5% BOH gratuity applied to all checks (this means an additional $5-$7/hr depending on volume of sales)

- Weekly paychecks

- Annual salary reviews with raises considered for quality work & cost of living adjustments

SCHEDULE

- 33-38 hours per week. Generally 4-5 days per week, including weekends

- We respect your time and do our best to avoid changing schedules last minute or calling you in without notice

Bi-annual performance review with the opportunity to provide feedback about your work experience; these are designed to support you as our staff member & listen to your needs

JOB OVERVIEW

- Set up, work, & break down stations in the kitchen as assigned: pantry/garde manger, grill, sauté. Maintain clean, efficient, organized mise en place & contribute towards overall cleanliness, efficiency, & organization in the kitchen.

- Work with the kitchen team to prepare, cook, taste & plate food that meets the award-winning standards set by our Sous Chef Case Ruiz & Executive Chef Trevor Payne

- This is a job for people who love cooking and want a culinary career. Line Cooks at Tall John’s hone their culinary skills in a driven yet pleasant & supportive atmosphere. If you aren't interested in learning & growing as a chef, this isn't the right job for you.

- Attention to detail is important, as is the willingness to accept feedback and guidance during a shift

- Work in an open kitchen & expect to plate dozens of dishes over a service. Tall John's is one of the busiest restaurants in Asheville; the busier we are, the more money you make thanks to our kitchen service charge, which is non-negotiable and added to all checks. A good night for the house is a good night for you

- We expect line cooks to be effective & composed communicators, not just because the kitchen is open but also because communication is key to making sure everyone BOH is having a good time

- Like the rest of the team, Line Cooks must adhere to all management policies, including our high standards for kitchen safety & food sanitation

PHYSICAL DEMANDS & WORK ENVIRONMENT

- Must be able to move &/or handle equipment, product, etc. weighing up to 50 pounds.

- Must be able to work varied hours/shifts as business dictates.

- Must be able to stand for up to 8 hours a day in a warm, busy restaurant kitchen environment.

- Must be able to tolerate potential allergens: peanut products, egg, dairy, gluten, soy, shellfish, etc.

- Comfort working in an open kitchen during service in view of (& sometimes in conversation with) customers.
