ABOUT US:

We’re Fort George, a family-owned and operated craft brewery in Astoria, Oregon. Have you been to Astoria? It’s great here. We have lots of breweries. We have a big bridge, we have elk, trees, rocky beaches, good surfing, great fishing, nice parks, and confusing traffic patterns. We love it here. We think you might, too. We’ve been making beer for 15 years now and things have changed a lot. We started out making beer on the 8.5 barrel system in the back of our Pub and soon enough we were selling the beer faster than we could make it. So we expanded. As we’ve grown, we’ve become more than a brewery. Fort George is proud to be a member of our thriving community, operating 2 restaurants, a taproom, 2 smaller-scale research and development breweries, one large-scale production facility, and a craft-focused distributor representing a handsome portfolio of over 200 similarly-minded breweries, wineries, and cideries. We distribute our original beers across the Pacific Northwest but our hearts are in Astoria. We make beer for everyone, for our community, for you. And we could use your help.

The purpose of this position is to keep our cooks totally stocked with all the ingredients and products they need to prepare the tasty foodstuffs that our menus offer. They are the glue that holds our kitchen together, and without them we would be lost. Prep cooks prepare a variety of food products including meats, seafood, poultry, vegetables, sauces, breads and other products using a variety of equipment and utensils, according to the Daily Prep List. Prep cooks are expected to possess a fundamental knowledge of our menu items and the ingredients that make up those items. Prep cooks are expected to maintain clean, orderly, and well-stocked walk-in coolers and food storage areas. Varying schedule to include weekends, evenings, holidays and extended hours as business dictates.

RESPONSIBILITIES:

Opening and closing prep areas

Cleaning and maintaining equipment used in food production

Maintaining a clean, sanitary work station, and conducting general kitchen cleaning

Preparing a variety of meats, seafood, poultry, vegetables, and food items according to specifications

Assuring accuracy for all recipes, portion sizes, prep methods, and kitchen rules, policies, and procedures

Monitoring par-levels of ingredients and products, ensuring there are always enough for the day/week

Handling, storing, and rotating all products properly

Attending all scheduled employee meetings and mandatory events

Adhering to grooming and hygiene standards consistently

DESIRED SKILLS & EXPERIENCE:

Must be 18 years of age or older

2+ years of commercial kitchen experience preferred but not required

Valid Food Handler’s card required (may be obtained within 30 days from first date of employment)

Ability to read labels on chemicals and products

Knowledge of workplace and safety procedures (may be obtained during training)

Must be able to communicate with patrons and coworkers

Other Responsibilities:

Continuing food and menu education

Other duties assigned by supervisor

Filling in for absent staff as needed
