Aslan Brewing is currently searching for a new Kitchen Manager for the flagship Brewpub!

As Kitchen Manager (AKA Executive Chef), you are responsible for all culinary activities for the brewpub and its associated BOH prep and storage operations, both on-site and off-site. This includes, but is not limited to, onboarding and termination of BOH staff, training BOH staff, scheduling BOH staff, conducting reviews and frequent check-ins with BOH staff, menu development, product sourcing and purchasing, inventory tracking, food costing, labor tracking, sanitization policies, kitchen quality control and quality assurance, and other various administrative tasks in the office.

It will be your job to ensure quality culinary dishes are being prepared and served on an efficient schedule, and within a strict budget, in order to boost the brewpub's overall profitability. An appropriate amount of facetime and personal involvement is also expected in daily kitchen operations, as to not isolate you from the staff experience. You will be responsible for maximizing the productivity of the entire BOH staff and ensuring all equipment and tools are in working order. If equipment needs repair, or any significant maintenance or construction projects are needed in the kitchen, you will be expected to report this immediately to the GM for his or her consideration and direction.

The Kitchen Manager is also responsible for tracking and reporting of BOH progress. This includes, but is not limited to, quarterly and monthly reports detailing current goals and objectives, challenges and setbacks, and changes in spending, food sales, and labor costs. Weekly tracking of purveyor price changes are required to maintain the most attractive food cost percentage as possible. Be ready to negotiate. You are the owner of your department and it is up to you to set your own goals and benchmarks. There are no high fives for increasing costs or headcounts!

You will be expected to participate in the weekly BOH/FOH Meetings and expediently communicate with GM, FOH MGMT and ownership when questions, constructive criticism, or other ideas arise. You must actively maintain healthy relationships with BOH staff, fellow managers, and the ownership team, and maintain composure when communication conflicts occur. As Kitchen Manager, you are a leader and must therefore lead by example in all aspects of the workplace in order to ensure peace and positive vibrations.

Essential Duties And Responsibilities

-The ability to demonstrate a high level of leadership and manage in a high energy and diverse environment with focus on upholding a high level of quality during periods of extreme volume.

-The team is large and diverse. It is up to you to act as the glue that holds the team together. Be able to quickly identify team issues and come up with swift resolutions.

-Experience with managing labor and food costs.

-Ability to set goals and reach the goals you set.

-Able to identify inefficiencies and quickly react to them.

-Coordinates the work of cooks and other kitchen employees to assure that food preparation is economical and technically correct and within budgeted labor cost goals.

-Ensures that high standards of sanitation, cleanliness and safety are maintained throughout all kitchen areas at all times.

-Establishes controls to minimize food and supply waste and theft.

-Safeguards all food preparation employees by implementing training to increase their knowledge about safety, sanitation and accident prevention principles.

-Prepares necessary data for applicable parts of the budget; projects annual food, labor and other costs and monitors financial results; takes corrective action as necessary to help assure that financial goals are met.

-Ensures proper staffing for maximum productivity and high standards of quality; controls food and payroll costs to achieve maximum profitability.

-Evaluates food products to assure that quality standards are consistently attained.

-Interacts with management to assure that food production consistently exceeds the expectations of guests.

-Establishes and maintains a regular cleaning and maintenance schedule for all kitchen areas and equipment.

-Supports safe work habits and a safe working environment at all times.

Qualifications

Knowledge, Skills And Abilities

-Knowledge of and love for food and craft beer

-Strong organizational and communication skills.

-Ability to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists.

-Working knowledge of Excel, Outlook, and Word.

-Able and willing to work more than 40 hours per week when necessary.

Education/Experience

-Bachelor's degree or related culinary degree with four or more years of industry and culinary management experience.

-Previous experience with control of food and labor cost, demonstration cooking, menu development, and pricing and development of culinary team preferred.

-Cross-functioning team management experience

-High volume experience

-The work environment is usually that of a high-stress, fast-paced restaurant.

-The employee frequently must work in a sanitary environment.

-The employee regularly works around high voltage, flame, hot liquids, and steam.

-The employee frequently must work in an environment with a moderate to high noise level.
