Line Cook
Location: Downtown Los Angeles
Schedule: Full-time / Part-time, must be available on weekends and holidays
We’re looking for an experienced and reliable Line Cook to join our team at one of LA’s top BBQ spots. This role is ideal for someone who understands the craft of slow-smoked meats, thrives under pressure, and takes pride in delivering consistent, flavorful dishes.
What You’ll Do:
Operate and manage smokers and grills during daily service and prep
Cook brisket, ribs, pork, and other proteins to proper texture, flavor, and tenderness
Monitor meat throughout the day — adjusting temperatures, wrapping, and rotating as needed
Prep dry rubs, sauces, brines, and sides according to standardized recipes
Follow prep lists and ensure all meats are properly trimmed, seasoned, and stored
Work the hot line and/or slicing station during peak service
Maintain cleanliness and organization of your station, tools, and smoker area
Perform daily cleaning and maintenance of smokers and kitchen equipment
Record and track temps, cook logs, and yields to minimize waste and improve consistency
Follow all health and safety regulations, including proper food handling and storage
Communicate with kitchen and FOH teams to ensure smooth service and timing
What We’re Looking For:
3+ years cooking in a professional or high-volume kitchen environment
Solid knowledge of wood smoke, cook times, meat cuts, and BBQ styles - a big plus
Comfortable working long hours on your feet, indoors and outdoors, around heat/smoke
Strong sense of timing, responsibility, and attention to detail
Ability to lift 50 lbs and move quickly in a fast-paced, team-focused kitchen
Self-starter with a positive attitude and willingness to learn and grow
Open availability preferred (weekends & holidays required)
