Parker-Lusseau Pastries, Inc. is husband and wife owned and operated, since 1998. Both Anne Parker and Yann Lusseau are pastry chefs. We are a French Patisserie with American Influences. We specialize in breakfast pastries, tarts, cakes & cookies. We also make a range of savory items, including quiches & sandwiches.
Summary/objective
The Assistant Baker plays a vital role in the preparation and baking of a variety of doughs and baked goods in a fast-paced environment. This position involves early morning shifts and supports the Head Baker in producing high-quality items for both retail and wholesale customers. The Assistant Baker is responsible for maintaining cleanliness, documenting inventory, and preparing for the next day's production. A strong attention to detail and a commitment to organization are essential, as is the ability to work effectively in a physically demanding role.
Essential functions

-Prepare and assist in the baking of various doughs, including croissants, ciabatta, challah, puff pastry, sweet dough, pte brisée, cookie doughs, and holiday specialties.
-Shape, roll, cut, and bake prepared doughs for retail and wholesale distribution.
-Box and label baked goods for delivery to the retail location and wholesale customers.
-Maintain accurate daily documentation of inventory and production processes.
-Ensure cleanliness and organization in the baking area by performing daily cleaning tasks, including sweeping, wiping down surfaces, and cleaning equipment.
-Participate in major cleaning events as scheduled, contributing to overall kitchen hygiene.
-Use a digital scale to measure ingredients accurately, ensuring adherence to recipes.
-Employ basic math skills to maintain inventories and assist with ordering as needed.
-Lift and handle heavy bags of ingredients, such as 50-pound bags of flour or sugar, for refilling storage bins.
-Support the Head Baker in preparing for the next day's work, ensuring all necessary ingredients and tools are ready.
-Other duties as assigned.
Work environment
This is an in-person position performed in a production kitchen in a downtown location. The production kitchen is light and airy. There is frequently noise from compressors, air gun (egg wash), chocolate sprayer, blender and hood. There is plenty of space in which to work. Breaks/lunches are taken either outside in the patio or up in front of the kitchen, which has tables and chairs.
Physical requirements
-Ability to lift up to 50 pounds.
-Requires standing for 3-4 hours at a time.
-Ability to perform physical and repetitive work throughout shift.
-Required education and experience
-Completion of Serve Safe Certificate upon hire. This course must be taken every 4 years.
-Minimum 2 years prior baking experience
Expected hours/schedule
4:00 am to 12:30 pm, Monday - Wednesday.
