Overview:
The Chef is responsible for providing nutritionally balanced and appropriately portioned meals to residents for the duration of their participation in the program. Chef will prepare midday and evening meals during the week, plus pre-prep two hot meals for each day of the weekend, which qualified supportive staff can identify and stage during mealtimes. Chef will additionally be responsible for keeping snacks and morning meal items stocked and accessible to residents.
Accountability: Reports directly to Program Director.
Duties:
Will prepare two hot meals to residents per weekday, to be served not more than 15 hours between evening and morning meal.
Write menus for meal planning at least one week in advance. Will keep menus on file for a minimum of 30 days. Shall keep menu posted in conspicuous area for review by residents, State or accrediting agency.
Responsible for maintaining an orderly work area, is to follow all regulatory guidelines for safe food handling.
Is to prepare a list for groceries at least one week in advance. Should consider the needs of residents as well as items to fulfill meals on upcoming menu.
Should be educated on restricted, modified, and specialty diets for medical, religious, or preferential purposes. Should be sensitive to the dietary needs of alternate populations.
All foods shall be purchased from public sources whose federal, state, or local license is verified. Menus shall be developed on a weekly cycle and changed at least quarterly. Chef shall be proficient in a variety of dishes.
All food shall be safe and of the quality necessary to meet the needs of the residents, and shall meet the standards set forth in the "Recommended Dietary Allowances" 9th addition (1980). Chef will be knowledgeable of these recommendations.
Minimum Qualifications: Must have a high school diploma or equivalent. CPR/First Aid Certificate required. Must have a current TB Test and a valid state driver's license. Must be registered with the state agency. Should be proficient in a variety of office software (email tools, spreadsheets and databases) and hardware (copy, fax, computer, etc.).
Preferred Qualifications: Holds a bachelor's degree. Has a minimum of two years' experience in healthcare.
Physical Requirements: Must be able to sit, stand, and walk intermittently. May be required to lift up to 25lbs. May be required to ascend/descend stairs.
