Kitchen Culinary Production Manager:

Monday - Friday with Occasional Weekends

Schedule of 40 hours per week

$83,200 - 93,600 annually

JOB REQUIREMENTS:

Be experienced with cooking, menu development and demonstrate the ability to successfully lead a diverse team of staff by coaching and training cooks and other staff in a high-volume kitchen. The Manager will also demonstrate a high attention to detail and maintain high standards for quality, cleanliness, presentation, food safety and efficiency.

At least 3 years of hands-on experience supervising and directing kitchen personnel.

Demonstrated ability to work successfully with a culturally diverse workforce, and with all levels of staff and management. Ability to work successfully with all levels of staff and management.

Excellent organizational, interpersonal, and communication skills

Computer competence in MS Office Suite tools, ability to learn reporting tools in kitchen database.

Minimum 2 years as a Cook required - high volume production preferred. Demonstrated understanding and appreciation for food handling health and safety requirements, with careful attention to established critical incident prevention and response.

Able to read, write and communicate effectively, as it relates to the job and to the safety regulations.

Must be innovative and have the ability to make suggestions for changes to the operation as needed to further improve the work environment and unit performance.

Demonstrate strong understanding of kitchen systems, operations, procedures and policies.

Valid CA food handler’s certification required.

Must pass pre-employment testing. (Background Check, Physical Abilities Test)

Must be able to meet the physical requirements listed in the physical job description.

Must be 18+ years of age.

DUTIES AND RESPONSIBILITIES: Under the supervision of the Executive Chef, and in accordance with the provisions of the MOWSF Employee Handbook, the Kitchen Culinary Production Manager will:

Develops the skills of kitchen staff with specific emphasis on safety and sanitation, high volume and high-quality food production.

Supervises cook and tray line crews ensuring daily production deadlines are met while maintaining a work environment that is safe and free of injuries.

Ensures that kitchen staff always have the proper PPE and it is always in use, i.e. nonslip shoes, appropriate uniform, face covering and face shield (when appropriate), hair net, hat or restraint and the proper use of gloves.

Leads by example in the implementation and execution of established health and safety protocols. Ensures all production areas conform to health and safety standards, product specifications, recipes, policies and procedures for all menu items and ingredients

Initiates review of kitchen production failures and near-miss events related to food health and safety. Promptly reports, documents, and submits corrective action plans for all food safety irregularities.

Holds regular meetings with all food production staff and conducts routine inspection and evaluation of all kitchen operations including food presentation, food quality, kitchen cleanliness and safety. Works respectfully with and maintains positive relationships with each staff and department leaders.

Communicates, executes and launches new menu items as directed by the Executive Chef.

Manages inventory and facilitate daily order lists for seamless production.

Works closely and collaboratively with the teams to increase operating efficiency through maximizing productivity of staff, developing new procedures or streamlining processes encompassing all areas including food safety, food presentation, prep and cooking procedures.

Monitors kitchen equipment for repairs needed.

Executes all agency food safety related strategies, policies and procedures; maintains open communication with all related departments to address the identification of food safety hazards and process improvement opportunities.

Ensures compliance with applicable food safety regulatory requirements (State and local).

Conducts food safety observations of key associates performing food safety activities.
