Il Mercato di Che Fico is seeking a new Market Sous Chef to join our team!

From the Back Home Hospitality team that brought Che Fico and Che Fico Alimentari to San Francisco, comes a new Che Fico location in Menlo Park! Il Mercato di Che Fico is featured in the Springline development and is a 4,500-square-foot specialty market in the vein of a Che Fico farmers market meets Eataly, with Che Fico’s signature style applied.

At Il Mercato di Che Fico, you’ll find beautiful produce from local farmers, a deli with salumi created in- house, cheeses imported from around the world, a butcher counter with dry-aged meats, a seafood counter with the freshest catches, more than 100 bottles of wine, and a prepared foods section with a variety of grab-and-go options such as sandwiches and salads.

The location will feature a walk-up gelato window on El Camino Real, where freshly spun flavors are available every day. We will also showcase the highly successful Che Fico line of consumer-packaged goods, including sauces, condiments, fresh pastas, salumi, and more. Il Mercato di Che Fico will have a robust catering program that offers breakfast, lunch, and dinner options for everything from small celebrations to work lunches to big parties.

About the Position:

Che Fico is first and foremost a San Francisco restaurant and establishes itself as a member of the community through warm hospitality and a generous spirit.

We are looking for a Gelato and Pastry production lead interested in becoming responsible for a small pastry program producing various Italian baked goods, breads and dessert production. Our Mercato offers gelato both by the scoop and by the pint and we pride ourselves in a rotating, highly seasonal menu. Additionally, the Production Lead will assume responsibility for producing desserts as needed for catered events and holidays, support the pastry production of our restaurant, order and maintain inventory of pastry goods and balance the department's labor and food costs.

Our ideal candidate will have several years’ experience in high quality restaurants and/or bakeries, be self motivated, highly organized, a good communicator and leader and strive for consistency and excellence on a daily basis. Joining the Che Fico team will provide an opportunity to learn how to make all types of traditional and unconventional Italian pastries, breads, confections, and many other techniques in a high volume setting from Chefs with experience at the best restaurants in the world. We source products from many extraordinary local farms whom we have direct relationships with and will work to expand your product knowledge base - our team visits three bay area markets every week to source the best product possible. Candidates must have four years of cooking experience, a great attitude, a good sense of humor, drive, dedication to their craft, and a true willingness to learn. Experience in Italian cuisine and previous management experience is a plus, but not required.
