SUSHI CHEF JOB DESCRIPTIONS

AKIRA Aptos are looking to add two (2) experienced sushi chefs to our diverse and multi-faceted team of chefs. Nominated best sushi restaurant in Santa Cruz for many years, we strive to provide not just the freshest seafood and sushi but also the best environment to work at. Our diverse staff is what we build our brand and culture from. Our staff members come from many different backgrounds, with different experience and skillsets. Yet all members work together in a very positive and tight-knit environment. We strive to maintain a workforce where every individual is heard and respected for their thoughts and ideas in order to create an environment where every member is proud to be a part of. We are looking for chefs that are enthusiastic and passionate, yet willing to learn our style of sushi and get adapted fast and well into our culture.

If YOU:

o Understand and can follow food safety/sanitation protocols

o Are experienced in the restaurant and/or hospitality industry

o Are a fast learner that can memorize ingredients on our menu in a short time (don’t worry, we provide cheat sheets for you as you work at the sushi bar)

o Are able to make food for consumption with knowledge and proper techniques and equipment to be used

o Are passionate about making sushi and Japanese-inspired dishes

o Can attend to customers’ needs and answer their questions about AKIRA food or fish

o Are able to listen and learn new information, new techniques

o Are open-minded to get along and work well with a diverse team. THIS IS A MUST!

o Are able to work in a distracting environment

o Are able to maintain a calmed and professional demeanor during busy and stressful hours

o Able to walk and stand for a long period of time, and lift 30-50 pound objects

o Are flexible to work different shifts, including evening shifts, weekends and/or holidays, and are ok with working overtime if asked to

Then YOU COULD BE QUALIFIED TO BE A PART OF THE AKIRA APTOS TEAM. What our chefs do on a daily basis:

o Cook rice

o Prepare sauces

o Prepare ingredients for use throughout the day and to carry over the next morning

o Make sushi to order

o Rotate food properly and practice FIFO (first in first out)

o Communicate with servers when there are questions about food, tickets, or anything related to the job

o Communicate with kitchen chefs if any questions arise

o Talk to and entertain guests at the sushi bar

o Put away food and clean the sushi showcases at the end of the night. Sweep and mop the floor, as well as reset the sushi stations to get them ready for the next morning

REQUIREMENTS:

o Must have a valid California Food Handler Certification

o Must be able to work Sundays (either lunch or dinner shift, or BOTH)

o Compensation: starting at $18/hour (depends on experience and skill sets) + tips
