Responsibilities of the Line Cooks:

Follow all specifications to properly and efficiently prepare and present all food items to be served, including accommodating special guest requests.

Follow all specifications to properly and efficiently prepare hot foods, side dishes, and specialty items for employee meals, using left-over food from special functions as much as possible.

Follow all specifications to properly handle all product used in hotel cooking, including trimming and cutting; marinating; and covering, labeling, and storing functions as much as possible.

Assist, as directed, to prepare food for banquet functions.

Ensure proper portions of meat, fish, poultry, as specified, are served to each restaurant and banquet function.

Personally ensure the quality and quantity, as ordered, of all meats, fish, and poultry delivered to the hotel.

Take daily inventory of all items in the meat cooler and fish storage reach-in, and assist, as directed, to order stock.

Rotate food in refrigerator to minimize waste and spoilage.

Assist, as directed, to order food supplies.

Follow all specifications to properly set up hot or cold line stations.

Communicate all guest requests to an appropriate supervisor in a timely professional manner.

Represent and market The Sea Ranch Lodge in a positive and professional manner as requested and continually promote TSRL internally and externally by attending special events when requested and building relationships both on and off property.

Promote and comply with all policies and procedures of The Sea Ranch Lodge.

Immediately report all suspicious occurrences and hazardous conditions and avoid injury to self and others.

Maintain the cleanliness and safety of work areas and equipment at all times.

Attend all mandatory meetings as directed.

Qualifications for the Line Cook:

Able to understand basic English, and to follow simple verbal directions

Must have basic knowledge of production and operations in all relevant kitchen areas

Must be familiar with proper use and maintenance of relevant kitchen equipment and machinery

Valid California driver’s license required

Proof of personal automobile insurance coverage required

Hotel experience preferred but not required

We are also seeking a Steward/Dishwasher to join our team. The Steward/Dishwasher will maintain banquets and operational functions in the restaurant, provide clean tableware for all hotel dining areas and functions, clean and sanitize all pots and pans used by the kitchen staff, and maintain a clean, safe, and comfortable work area for the kitchen and food service staffs.

Responsibilities of the Stewards and Dishwashers:

Perform routine pre-service tasks as directed, including transporting china, glassware, and silver; making sure service plates are hot and ready to be used.

Attend to food service lines throughout service, including maintaining an adequate supply of clean dishes and utensils; refilling plate warmers as needed; and providing a constant supply of hot dishes and platters.

Sweep, clean, and de-grease all kitchen floors daily.

Follow all specifications to properly presoak, clean, and store all china, glassware, and silverware.

Tear down dish-washing machine at end of each shift and thoroughly wash baskets, tanks, sprayers, and all parts, in preparation for the next shift.

Correctly follow all specified procedures to wash, disinfect, and store pots, pans, and fryers.

Maintain the cleanliness of all sinks in the back of the kitchen, keeping them free of pots and pans.

Retrieve fry pans from the line cooks, and clean and return them as soon as possible.

Perform routine cleaning tasks in the kitchen as directed, including sweeping and mopping; cleaning tasks in the kitchen as directed, including sweeping and mopping; cleaning all machines, sinks, shelves, and working tables; sweeping, cleaning, and mopping inside and out of all walk-in refrigerators and freezers; keeping dumpster area clean and orderly at all times; cleaning dish and food warmers; cleaning work areas; keeping coffee machine area clean; and cleaning and mopping employee dining’ lounge area.

Empty, wash, and reline all trash cans throughout the kitchen as soon as they are filled.

Remove dirty towels from kitchen collection areas as they are filled and replenish supply of clean linens and towels as needed.

Maintain the silver storage areas.

Set tables and empty trash containers in the employee lounge as needed, prior to and during service hours.

Handle, store, and label all hazardous substance according to state and federal regulations.

Represent and market The Sea Ranch Lodge in a positive and professional manner as requested and continually promote TSRLinternally and externally by attending special events when requested and building relationships both on and off property.

Pomote and comply with all policies and procedures of The Sea Ranch Lodge.

Immediately report all suspicious occurrences and hazardous conditions and avoid injury to self and others.

Maintain the cleanliness and safety of work areas and equipment.

Attend all mandatory meetings as directed.

Qualifications of the Steward / Dishwasher:

Able to understand English, and to follow simple verbal instructions.

Some hotel/restaurant experience preferred but not required
