About the role
The Lead Line Cook will be responsible for overseeing routine kitchen tasks such as setting up workstations and ingredients, so that food can be prepared according to recipes. You lead a professional team maintaining quick, diligent and fast-paced work within a busy environment.
Responsibilities
Lead the kitchen team in following the prep list created by the Estate Chef.
Label and stock all ingredients on shelves so they can be organized and easily accessible.
Measure seasonings, prepare cooking ingredients by washing and chopping vegetables, cut and portion meat, fish and poultry to be used in cooking.
Cooking duties such as reducing sauces, parboiling food, etc.
Minimize waste of products and accept or reject ingredients based on quality and quantity.
Clean, organize, and maintain walk-in refrigerator, reach-in refrigerator, cooler drawers, prep, and dry storage area.
Rotate product according to First In, First Out to maintain shelf-life standards.
Log and discard all products not used by the end of the shift on the use by date.
Understand and comply with food safety and temperature standards.
Maintain a clean and orderly kitchen by washing dishes, sanitizing surfaces, taking out trash.
Ensure all food and other items are stored properly and comply with nutrition and sanitation guidelines.
Other kitchen duties as assigned.
About you
You have 3 to 5 years of experience as a line cook.
You have knowledge of health and safety rules in a kitchen.
You have manual dexterity with the ability to operate cutting tools and kitchen utensils.
You are patient with an ability to stay positive under pressure.
You can complete projects and assignments thoroughly with care in a timely manner.
You adjust to high-pressure situations and assume responsibility for personal growth and development.
Full-Service Restaurant Kitchen Experience is desired.
You have strong interpersonal skills with the ability to communicate with individuals from diverse backgrounds.
Must be able to work weekends and holidays.
You must be able to lift up to 50 pounds.

Pay Transparency Disclosure: The base pay offered for this position is $22 to $24 per hour and other benefits. These figures represent what we reasonably expect to pay for this position, but the actual compensation offered will depend upon numerous job-related factors, including but not limited to candidate qualifications, skills, experience, education, location, and alignment with market data. Our expectation is that the incumbent will work out of our Paso Robles, CA location. If the incumbent works out of another location, the wage rate may fall above or below this range. Treasury reserves the right to modify the range in the future.
