Mr. Tuna, the east coast's first sushi food truck turned brick-and-mortar, offers high-quality sustainable fish in a new petite location, featuring a sushi-counter, seasonal outdoor seating, and a distinct beverage program focusing on sakes and curated cocktails. $75k base with kitchen gratuity- $300-500 per week additionally

Job Responsibilities

Manage, interview, hire, fire, discipline, and hold team to high standards

Orient new employees and oversee training to ensure quality and make sure standards are withheld

Manage budgeted labor costs, control overtime

Open, work mid shift, or close the restaurant- depending on restaurant needs

Ensure monthly inventories are completed appropriately

Ensure maintenance requests are handled, and service pieces and serviceware are in good working order and good shape

Ensure the restaurant is clean and opening+closing checklists are completely daily

Qualifications/Experience

3+ years kitchen experience

Sushi experience a plus

Basic sushi knowledge required
