Now Hiring: Lead Cook / BOH Supervisor — Laurino’s Tavern (Brewster, MA)
Laurino’s Tavern is a lively, family-run Italian-American restaurant on historic Route 6A in Brewster. We’re growing and looking for a hands-on Lead Cook to run the line and support kitchen operations.
You’ll:
Lead the line during service; strong on grill, sauté, and expo
Build and post the weekly BOH schedule (cooks, dish, prep); manage swaps/coverage
Place and receive food orders; maintain par levels, rotate stock, and reduce waste
Standardize and manage recipes, prep lists, and station guides; ensure portioning and plating consistency
Train and coach cooks; conduct pre-shift line checks and tastings
Track inventory and assist with food-cost targets; communicate 86s and specials with FOH
Uphold ServSafe/HACCP standards: temps, logs, labeling, cleanliness, and allergen safety
Collaborate with ownership/chef on menu items, specials, and seasonal prep
Jump on any station as needed to keep tickets moving
You’ve got:
3+ years hot-line experience (sauté/grill required); prior lead/sous or shift-supervisor experience preferred
Order/inventory experience with vendors; comfort with par sheets and invoice checks
Scheduling experience (any platform) and clear communication skills
Sense of urgency, calm under pressure, and a coaching mindset
ServSafe Food Manager (or willingness to obtain); allergy awareness
Nights/weekends/holidays availability in season; reliable transportation
