Who We Are:

We are a new intimate handroll and izakaya bar concept in Koreatown, by renowned Michelin starred chef Akira Back. The menu will feature innovative handrolls, izakaya, desserts, and alcoholic beverages. We are a fast-growing restaurant brand known for our commitment to quality and excellence. As we expand, we are seeking a talented and passionate Head Chef to join our team and contribute to our culinary success.

About the Position:

We are looking for a skilled and enthusiastic Head Chef to start at our Koreatown location with the potential to work at multiple locations within our brand. As our company continues to grow, you will have opportunities to showcase your culinary talents across various locations. The Head Chef will oversee all kitchen operations, ensuring the delivery of high-quality dishes and maintaining the restaurant’s standards of excellence. This role requires a deep understanding of Japanese cuisine, and the ability to create and execute a dynamic and innovative menu. The ideal candidate will have a passion for culinary arts, exceptional leadership skills, and a commitment to delivering an unparalleled dining experience.

Core Duties:

- Regularly taking inventory of food supplies and other products for ordering.

- Expertly cutting, slicing, and fileting different types of fish.

- Responsible for ordering product / supply for the restaurant.

- Recruit, train, and mentor kitchen staff, fostering a positive and productive work environment.

- Conduct regular performance evaluations and provide ongoing feedback to staff.

- Schedule and coordinate staff shifts, ensuring adequate coverage.

- Interact with customers at the sushi bar with excellent customer service.

- Develop and manage the kitchen budget, including food costs, labor, and equipment maintenance.

- Prepare and cook menu items according to our recipes and standards.

- Properly store seafood by always keeping it on ice and changing containers nightly.

Qualifications:

- Proven experience as a Chef De Cuisine / Head Chef / Chef in a Japanese restaurant or equivalent experience.

- Must have manager experience, not limited to but including inventory, ordering, scheduling, and food cost.

- Extensive knowledge of Japanese cuisine

- Strong leadership and team management skills.

- Excellent communication and interpersonal abilities.

- Creative and innovative approach to menu development.

- Strong organizational and time management skills.

- Ability to work in a fast-paced environment and handle pressure.

- Culinary degree or equivalent professional experience.
