Job Overview:

Breakwater Barbecue is an American craft barbecue establishment who specializes in smoked meats cooked over wood fire on off set smokers. We are looking for someone to help uphold our recent addition to the Michelin Guide in 2023/2024 into this new year and beyond. We are a huge believer in low turnover in the kitchen due to creating a positive culture of empowerment, trust, loyalty and talent. Expanding our menu of smoked fare with seafood dishes, seasonal salads, smokey veggie dishes, sausages and MORE will be at the fore front of this Head Chef position. We are seeking an experienced and talented Chef that can lead by example and become the backbone of our culinary team. As the Head Chef, you will be responsible for overseeing all aspects of our kitchen operations, including menu planning, food production, inventory control, and kitchen management. The ideal candidate will have strong leadership skills and a passion for creating exceptional culinary experiences.

Responsibilities:

- Lead and manage the culinary team, providing guidance and support to ensure high-quality food production

- Develop and execute creative and innovative menus that meet the needs and preferences of our guests and community.

-SEAFOOD skills is a must! We are on the beach and will be partnering with local fishing vessels to bring our customers specials that will be unique and highlight the hard work and quality seafood of our local purveyors.- Sausage making, butchery, and charcuterie is a huge plus.

- Oversee all aspects of food preparation, ensuring that meals are prepared to the highest standards of taste, presentation, and quality

- Manage inventory levels and control costs by implementing effective inventory control procedures

- Collaborate with the dietary department to ensure that special dietary needs are met for guests with specific requirements

- Train and mentor kitchen staff on proper food handling techniques, safety protocols, and sanitation procedures

- Maintain a clean and organized kitchen environment in accordance with food safety regulations

- Stay updated on industry trends and new culinary techniques to continuously improve our menu offerings

Experience:

- Proven experience as an Executive Chef or similar role in the food industry

- Strong leadership skills with the ability to motivate and inspire a team

- Extensive knowledge of kitchen management principles and best practices

- In-depth understanding of food safety regulations and procedures

- Excellent organizational skills with the ability to multitask in a fast-paced environment

- Strong communication skills to effectively collaborate with staff at all levels

Job Types: Full-time, Contract

Pay: $91,545.00 - $110,000.00 per year
