We are seeking a Dinner Line Cook (Sauté) with a wide variety of experience in high volume and fine dining. We're seeking a passionate culinarian who thrives in a high-paced, team-oriented environment. This person must be driven, detail-oriented, and eager to grow with a company that values creativity and continuous self-development.
The work schedule is Wednesday - Sunday (2:00 PM - 10:30 PM or until close). This position is based at our Estate: 11680 Chimney Rock Road, Paso Robles, CA 93446.
Job Description
- Primary role is to oversee the preparation, cooking, and presentation of food in their respective section of the dinner kitchen operation/menu including proteins, sauces, vegetables
- Will focus on hot appetizers, entrees and other hot dishes
- Assist with daily kitchen prep work and station set-up before service and maintaining the highest quality food preparation standards
- Prepare, cook and present culinary dishes; enforcing strict health and hygiene standards in the kitchen; and troubleshooting any problems that may arise
- Supports on prep and execution of any all culinary-related activities as they arise within our out-of-daily job norm
- Works with Executive Chef, Executive Sous Chef, Sous Chef to maintain standards and create new dishes
- Assists the Kitchen and Restaurant teams in preparing and executing any events
- Picks garnish as needed from the JUSTIN garden and communicates product needs
Qualifications
- 2+ years fine dining culinary experience
- Michelin star and/or Forbes 5 star preferred
- Exceptional attention to detail and passionate about food and wine
- Culinary Degree recommended
- Serv-Safe Certified
- Demonstrated strong ability to work well under pressure
- Ability to establish direction, obtain commitment and execute appropriate logistical processes
- Comfortable dealing with guests and purveyors on a daily basis
- Must thrive in a fast paced working environment
- Have a calm and approachable demeanor
- Superb time management and organizational skills
Pay Range: $24.00 - $27.00 per hour. Final compensation is dependent upon skills and experience.
