Position Summary: The Sous Chef supervises the kitchen and the culinary team to ensure all areas of the operation runs smoothly. They will be responsible for training and teaching the Line Cooks to meet and exceed quality standards, and will oversee the line, pantry, prep, and other workstations. The Sous Chef will set a good example in the kitchen, adhering to safety and cleanliness standards, while maintaining The Cliffs Mission, Values, and Forbes Standards.
Essential Functions of the job:
Works with the Executive Chef and other Sous Chefs in ensuring kitchen operations run smoothly
Manages the culinary team to ensure the line is moving quickly without sacrificing quality
Assisting the Executive Chef in training new hires and re-training existing employees when needed
Coaching to improve performance in the kitchen through observing and correcting
Ensure each shift is set up for success in a timely manner
Ensure proper sanitation of stations and all coolers, including walk in and reach ins
Follow direction of senior kitchen management, including Executive Chef and Executive Sous Chef
Prepare a variety of meats, seafood, poultry, vegetables and other food items
Cook on grills, ovens, grills, fryers and a variety of cooking equipment
Execute their responsibilities of the line consistently while maintaining food quality and presentation, in a timely manner and at a fast pace
Consistently understands and complies with our standard serving sizes, cooking methods, quality standards and kitchen rules, policies and procedures.
Maintain a clean and safe workstation, including tables, shelves, grills, ovens, fryers, pots and pans, convection oven, countertops and cooling equipment.
Close the kitchen appropriately and follow the checklist for closing the kitchen stalls. Help others close the kitchen.
Assist in completing monthly inventory counts as directed by Executive Chef
Work as Banquet Chef when directed by Executive Chef
Ensure all waste is disposed of into appropriate recycle and compost bins
Promptly notify the Executive Chef of any problems with food equipment and quality
Immediately informs manager of product shortages and any other inventory issue
Communicates with manager if there are any issues within the Kitchen staff and assist in identifying solutions when possible
Comply with all the hotel and restaurant conditions of employment and standards including uniform, grooming, health and safety
Comply with all health and safety regulations as ordered by local, county, and state government officials
Attend all scheduled staff meetings and offer suggestions for improvement.

Follows all hotel policies and procedures
Performs all other tasks as assigned by manager
Additional Job Duties:
Flexible work schedule
Able to work 40-45 hours per week, some Overtime required with Executive Chef approval
Able to work weekends and holidays
Education, Experience, Skills:
High school diploma; culinary degree preferred.
Working knowledge of guest services in a luxury hotel setting.
A minimum of 3 year of experience as a Sous Chef preferred
Understand basic English language.
Ability to work with people effectively.
Ability to multitask and work in mentally demanding situations.
Ability to communicate and share information to manager and teammates
Physical Requirements:
Ability to stand continuously for the duration of the shift (eight or more hours).
Ability to lift small packages (up to 40 pounds).
Be able to stretch, bend, bend and lift frequently up to 40 pounds in weight.
Ability to work in stressful situations.
